___Mr. Uchiyama, how long have you known about Kitakata ramen?
Uchiyama: I've known about it since I was a student. Several decades ago.
It was just during the ramen boom, and among the popular ramen like Sano ramen and Sapporo ramen, Kitakata ramen was also very popular.
Manager Okuyama: I see. So you've loved ramen since you were young.
Uchiyama: I've been coming to Sakauchi-san's shop since it first opened. Even back then, there were a lot of great customers.
How often do you attend now?
Uchiyama: Well, not really...maybe about half the month.
Manager Okuyama: Not really!
Uchiyama:Thank you so much for all your help. I love this store because I can come here without any hesitation.
Manager Okuyama: Uchiyama-san is on good terms with all the previous store managers.
Uchiyama: Once I like something, I'll keep coming back. I have very strong likes and dislikes.
___What do you like about Sakauchi?
Uchiyama:The staff's movements are great. I'm really impressed.
Manager Okuyama: We strive to make our customers want to come back and our staff enjoy themselves, so it's nice to hear you say that!
___What is your favorite menu item, Uchiyama-san?
Uchiyama: I like most of them, but I choose depending on my mood at the time.
I used to eat a lot of wontons, but recently I can't eat as much as I would like (laughs).
Manager Okuyama: Recently, we've been getting a lot of orders for green onion ramen and green onion miso. And gyoza too!
Uchiyama: I like Sakauchi's char siu, but I don't really like fat, so I always ask for it to be lean.
Manager Okuyama: Yes, we adjust things like that to suit the customer's preferences.
On the other hand, there are also people who like fat.
When Uchiyama comes to the restaurant, do the other seats naturally start to fill up?
Uchiyama: Come to think of it, what did I eat yesterday...?
___"Yesterday" means you were at the store yesterday too!?
Uchiyama:Yes, I come here often.
It's often crowded, so I wait until it's less crowded to go.
Sometimes the restaurant becomes full while you're eating.
Manager Okuyama: It's true, Mr. Uchiyama may be here most of the time when we're not busy.
By the time Uchiyama finishes eating, the restaurant may be crowded.
It seems like Uchiyama-san is attracting other customers.
___Is there anything you would like to see from Sakauchi in the future?
Uchiyama: Really satisfied so far.
If I could be greedy, I would like the staff to stay the same.
This restaurant really has a good vibe.

When you see something like that, it's no wonder the ramen tastes better!
