___Mr. Kamano, how long have you been coming to Sakauchi?
Kamano: If we're not limiting it to this store, it was decades ago.
The Uchisaiwaicho Under Guard store has been around for quite some time, but when did it open?
Manager Sugimoto: The Uchisaiwaicho Guard store was founded in 1987 and was originally called "Kura."
Also in attendance will be Sakauchi Shingo, founder of Sakauchi Shokudo main store in Fukushima.
Kamano:When I think about it, I've been going there for about 20 years.
My workplace is nearby so I came to the Under Guard store for lunch.
Manager Sugimoto: Due to the location, we have a lot of office workers as customers.
___How often do you come here, Kamano-san?
Kamano: I'm currently cutting back on ramen altogether, but I used to eat it once or twice a week.
I love Kitakata ramen and come here often.
___What do you like about Kitakata ramen?
Kamano:It has a light taste that is unlike anything else.
It has a simple and gentle feel to it.
No matter how many times I go, I never get tired of the taste and want to come back again and again.
Another great thing is that the staff become friendlier as you go there more and more.
I have a particularly good relationship with some of the staff, so I come here often.
Discount flyers are also nice (laughs).
Manager Sugimoto: Our staff is also happy to hear that you have come again.
___This store recently moved and was renovated, right?
Manager Sugimoto: Yes, we moved from the area near Uchisaiwaicho Station, but we still have regular customers who have been at our current store since before the move.
You can feel the closeness to the customers.

Kamano: Sakauchi's interior is also nice.
It has a Japanese feel and is very relaxing.
___I see, do you have any other requests for Sakauchi?
Kamano:Yes, that's true. The menu is very extensive, so I think it's great.
The seasonal ramen is also delicious.

Manager Sugimoto: Seasonal menus are popular. Our customers change with each season.
We even have some customers who eat our seasonal ramen two or three times a week!

What else does the ramen shop specialize in?
Manager Sugimoto: And of course, it has to be the char siu.
We are confident in our delicious, fatty pork slices, so we really want everyone to eat every last bit.
Kamano: I've been trying to cut back on fatty meats lately, but char siu is still delicious!
